Ingredients

  • ½ pound asparagus, hard ends trimmed
  • 1 teaspoon sesame oil
  • 2 teaspoons peanut oil
  • ¼ teaspoon fresh ground ginger
  • 1 clove garlic, minced
  • 1 cup cashews

Instructions

  1. Heat the sesame oil and peanut oil in a wok over medium heat.
  2. Add garlic and ginger; sauté lightly until fragrant.
  3. Add the asparagus and stir-fry for about 3–4 minutes, until tender-crisp.
  4. Toss in the cashews and cook for another 2 minutes, stirring frequently.
  5. Serve hot as a Paleo-friendly side dish.
