Ingredients
- ½ pound asparagus, hard ends trimmed
- 1 teaspoon sesame oil
- 2 teaspoons peanut oil
- ¼ teaspoon fresh ground ginger
- 1 clove garlic, minced
- 1 cup cashews
Instructions
- Heat the sesame oil and peanut oil in a wok over medium heat.
- Add garlic and ginger; sauté lightly until fragrant.
- Add the asparagus and stir-fry for about 3–4 minutes, until tender-crisp.
- Toss in the cashews and cook for another 2 minutes, stirring frequently.
- Serve hot as a Paleo-friendly side dish.
